How to Make Tater Tot Breakfast Casserole
Step 1: Make the sausage gravy
In a large skillet over medium heat, cook the breakfast sausage until browned.
Add the butter and let it melt. Sprinkle in the flour and stir for about 1–2 minutes to create a roux.
Slowly whisk in the milk, stirring continuously until the gravy thickens. Add salt, pepper, garlic powder, and onion powder.
👉 Keep the pepper on the lighter side for a more kid-friendly flavor.
Step 2: Assemble the casserole
Preheat oven to 375°F and grease a 9×13 baking dish.
- Pour sausage gravy into the bottom of the dish
- Sprinkle 1 cup of cheese over the gravy
- Arrange frozen tater tots evenly on top
- Finish with remaining cheese
Step 3: Bake
Bake for 35–40 minutes, or until the tater tots are golden and crispy.
For extra crispiness, broil for 2–3 minutes at the end.
Tips for the Best Breakfast Casserole
- Use mild sausage for the most kid-friendly flavor
- Don’t skip the broil step—it makes the tots SO crispy
- Let it rest for 5–10 minutes before serving so it sets up
- If your gravy gets too thick, just add a splash of milk
Variations & Add-Ons
You can make this your own depending on what you have on hand:
- Add scrambled eggs (if your family eats them)
- Top with crumbled bacon
- Swap cheddar for Colby Jack
- Add a drizzle of honey for a sweet + savory twist
Make Ahead + Storage
Make ahead:
Prepare the gravy and assemble the casserole the night before. Cover and refrigerate, then bake in the morning.
Store:
Keep leftovers in an airtight container in the fridge for up to 3 days.
Reheat:
Warm in the oven or microwave until heated through.
