Ranch BLT Pasta Salad with Feta & Cucumber
Ingredients
- 12 oz pasta (rotini or bowtie) cooked & cooled
- 8-10 slices bacon cooked & chopped
- 1 cup cherry tomatoes
- 1 cup cucumber (diced)
- 1/2 cup feta cheese
- 1/4 cup chopped red onion thinly sliced or diced
- 3/4-1 cup ranch dressing (homemade ranch dressing recipe in notes–highly recommend!)
- 1-2 cups shredded lettuce (add just before serving)
- 1-2 tbsp fresh dill or parsley chopped
- juice of 1/2 lemon
- black pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water until cooled.
- Cook bacon until crispy. Transfer to a paper towel-lined plate and chop.
- In a large bowl, combine pasta, bacon, cherry tomatoes, cucumber, red onion, feta, and herbs.
- Add ranch dressing and lemon juice. Toss until evenly coated.
- Season with black pepper to taste.
- Right before serving, gently fold in shredded lettuce.
- Serve immediately or chill for 30–60 minutes before serving.
Notes
- Add lettuce just before serving to prevent sogginess
- Start with less dressing and add more as needed
- Store leftovers in the fridge up to 2 days
