What We’re Eating This Week: 7 Family-Friendly Easy Fall Dinners
Okay friend, let’s make dinner a little easier this week with some easy fall dinners since it’s officially the first week of fall!
If you’re staring into the fridge wondering what on earth you’re going to feed everybody for the next seven nights, I’ve got you.
Here’s what we’re eating at our house this week — six family-friendly dinners, a grocery list, easy swaps, and a little bit of leftover strategy so you don’t have to reinvent dinner every single night.
And remember: a meal plan is supposed to make your week easier, not give you six more things to accomplish.
So if you need to swap something? SWAP IT.
If Tuesday’s dinner becomes Wednesday’s dinner? That’s fine.
If you order pizza on Friday because everybody is losing their minds? Honestly, that’s what the flex day is for. 😂

Meal 1: Smash Burgers + Crispy Oven Fries
Starting off with something that everybody generally agrees on around here: burgers.
Nothing fancy. Just crispy-edged burgers, melty cheese, and fries.
How to make it
Form your ground beef into loose balls and smash them down in a hot skillet or griddle until they’re thin and crispy around the edges. Add cheese, pile them onto toasted buns with your favorite toppings, and serve with crispy oven fries.
Serve it with:
- Crispy oven fries
- Pickles
- Lettuce + tomato
- Your favorite burger toppings
Easy swaps:
No ground beef? Ground turkey works!
No burger buns? Use sandwich bread, sourdough, or turn the whole thing into a burger bowl.
No potatoes? Sweet potato fries or frozen fries are completely acceptable. We are not trying to win an award here. 😂
Meal 2: Baked Tacos + Mexican Rice
These are one of my favorite kinds of family dinners because they’re basically tacos without everybody standing around making their own tacos.
Fill them, bake them until they’re crispy, add cheese, and call it dinner.
How to make it
Brown your taco meat and season it well. Fill tortillas with the meat and cheese, fold them up, and bake at 350 until they’re crispy and golden. Serve alongside Mexican rice and all your favorite taco toppings.
Serve it with:
- Mexican rice
- Chips + salsa
- Avocado or guacamole
- Sour cream
Easy swaps:
Ground beef → ground turkey or shredded chicken
Flour tortillas → corn tortillas
Mexican rice → plain rice + a squeeze of lime
No taco toppings? Cheese and salsa will get you there.
And if your kids are like mine and suddenly decide they don’t like tacos anymore? Put the meat, cheese, and rice separately on their plate and call it a win. 😂
Meal 3: Lasagna Soup + Garlic Bread
Okay, THIS is the dinner I’m especially excited about this week.
It’s cozy, hearty, and tastes like lasagna without requiring you to actually make lasagna. Which, honestly, is a win in my book.
How to make it
Brown your ground beef with onion and garlic, then add tomatoes, broth, and seasonings. Break your lasagna noodles into pieces and let everything simmer together until the pasta is tender.
Top each bowl with plenty of cheese and serve with warm garlic bread for dipping.
It’s basically all the best parts of lasagna in one cozy pot.

Serve it with:
- Garlic bread
- Simple green salad
- Parmesan on top
Easy swaps:
No ground beef? Ground Italian sausage is delicious here.
No mozzarella? Use shredded Italian blend or provolone.
No lasagna noodles? Any short pasta will work.
Want to stretch it? Add a little extra broth and pasta and serve it with bread.
Need it dairy-free? Skip the cheese topping or use your favorite dairy-free alternative.
And please don’t overthink this one. Soup is incredibly forgiving.
Meal 4: Creamy Chicken & Rice Casserole + Green Beans
It’s officially fall so….casserole night!
Because by Thursday I would like dinner to do approximately 80% of the work for me. 😂
This is cozy, filling, family-friendly, and makes a great candidate for leftovers.
How to make it
Cook your chicken and rice, then stir everything together with your creamy sauce and seasonings. Transfer it to a baking dish, top with cheese, and bake until hot, bubbly, and golden around the edges. Need a recipe? Our family loves this one from Simple Joy!
Serve it with green beans and you’ve got a full dinner without a whole lot of fuss.
Serve it with:

- Side salad
- Fresh fruit
Easy swaps:
Chicken breasts → rotisserie chicken
This is probably my favorite shortcut.
White rice → brown rice
Just make sure to adjust cooking time and liquid if you’re using uncooked brown rice.
Green beans → broccoli, peas, or a simple side salad
No chicken? Leftover turkey works beautifully.
Leftover idea:
Save a couple servings for lunch.
Because future-you deserves to open the fridge and find food waiting for her.
Meal 5: Chicken Enchilada Skillet + Chips & Salsa
We’re keeping things easy.
This is one of those “throw everything in a skillet and call it dinner” situations, which is exactly what I want at the end of the week.
How to make it
Cook your chicken, then add your enchilada sauce, beans, rice, and any veggies you’re using. Stir everything together in a skillet, top it with cheese, and let it get hot and bubbly.
Serve it with tortilla chips and salsa and call it a night.
Serve it with:
- Tortilla chips
- Salsa
- Guacamole
- Sour cream
- Fresh fruit
Easy swaps:
Chicken → leftover shredded chicken or rotisserie chicken
Black beans → pinto beans
No enchilada sauce? Use your favorite salsa + a little tomato sauce.
No rice? Serve it over tortilla chips, baked potatoes, or just eat it straight out of the bowl.
Need more veggies? Add corn, bell peppers, or zucchini.
Meal 6: Honey Garlic Chicken + Rice + Roasted Broccoli
We’re doing sweet, savory, sticky honey garlic chicken with rice and roasted broccoli.
And honestly? This is one of those meals that makes you feel like you really have your life together even when you absolutely do not. 😂
How to make it
Whisk together honey, garlic, soy sauce, and your seasonings. Cook the chicken until golden and cooked through, then pour the sauce over it and let it simmer until it’s thick and glossy.
Serve it over rice with roasted broccoli on the side.
Serve it with:
- Rice
- Roasted broccoli
- Fresh fruit
Easy swaps:
Chicken breast → chicken tenders
Broccoli → green beans, carrots, or Brussels sprouts
Rice → mashed potatoes or noodles
Honey → maple syrup
No fresh garlic? Garlic powder works in a pinch.
Meal 7: Flex
I am a BIG believer in a flex day.
Because life happens.
Maybe you have leftovers.
Maybe your husband wants to grill.
Maybe Grandma is having everybody over.
Maybe it’s Sunday and you simply do not want to cook.
That’s okay.
Use Flex Day to:
- Eat leftovers
- Make something from the freezer
- Have a family favorite
- Grill
- Go out
- Make breakfast for dinner
- Order pizza
The goal of a meal plan isn’t to trap you. It’s to give you somewhere to start.

A Few Helpful Kitchen Things
A few things that make getting dinner on the table just a little easier around here. These are things I actually use and love in my own kitchen — not a list of 47 things you suddenly need to buy. 😂

My Dinner-Prep Helpers
A good skillet
For smash burgers, baked taco meat, enchilada skillets, chicken… basically half the dinners in this meal plan. A good skillet gets used constantly around here.
A big Dutch oven
This is the one I reach for when soup is on the menu. It’s especially handy for big-batch dinners like our Smoky Lasagna Soup.
A rice cooker
If rice shows up on your weekly meal plans as often as it does around here, a rice cooker can be a very nice little dinner helper. Push a button and forget about it.
A good chef’s knife
You’re going to chop onions, garlic, potatoes, broccoli, taco toppings… having a knife you actually like using makes a surprisingly big difference.
A big mixing bowl
For sauces, marinades, taco meat, casserole ingredients, and approximately 900 things that happen in my kitchen every week. 😂
A garlic press
If your family eats a lot of garlic, this is one of those tiny tools that earns its spot in the drawer.
My favorite meal-prep/storage containers
Perfect for leftovers, prepped ingredients, and making sure Thursday’s dinner becomes Friday’s lunch instead of getting forgotten in the back of the fridge.
You definitely don’t need all of these to make this week’s meals.
But if you’re slowly building a kitchen you really love, these are some of the tools I’d reach for over and over again.

A Few Things You Can Prep Ahead
You absolutely do not need to spend your Sunday meal-prepping six dinners.
Honestly, please don’t. 😂
Instead, if you have 15–20 minutes sometime earlier in the week:
Make a batch of rice.
Use it for:
- Tuesday’s Mexican rice
- Thursday’s chicken & rice casserole
- Saturday’s honey garlic chicken
Shred your chicken.
If you’re using chicken for multiple meals, cook a little extra and shred it all at once.
Wash/chop your veggies.
Especially broccoli, lettuce, and taco toppings.
Check your freezer.
Pull out anything you need a day or two ahead of time. I like to put this in my planner the day before to remind myself to pull anything out of the freezer for the next days meal.
That’s it.
And Pleeeassse Remember: Swap Freely
This is your meal plan.
Not mine.
If your family doesn’t eat something, don’t buy it.
If you have something in the freezer that needs to be used, swap it in.
If Tuesday’s meal sounds better on Thursday, move it.
If you need to replace an entire meal because soccer practice got crazy and everyone is starving?
Girl.
DO IT.
A good meal plan should make you feel like someone handed you a little bit of help — not like someone handed you another list of things to accomplish.
