October Meal Plan Week 2: 6 Easy Dinners (Honey Garlic Chicken, Pizza Night & More)

If weeknight dinners feel like a hostage negotiation at your house too, hiiiiiiiiiiii, welcome, pull up a chair. This is Week 2 of my October meal plan series — six dinners, one slow cooker doing half the work, and zero 5pm panic.

(You can check out all of the meal plans here!)

The theme this week? Weeknight comfort. Nothing fancy, nothing that needs a culinary degree. Just food your people will actually eat.

The lineup

Honey Garlic Chicken
Bite-size chicken seared golden, simmered in a sticky honey-garlic sauce until glossy, served over rice. Ten-minute-gone territory. Picky-kid move: put the sauce on the side for dipping and watch it disappear.

Loaded Baked Potato Bar
The dinner where nobody complains — because everybody builds their own. Bake big potatoes until fluffy, set out bacon, cheese, sour cream, and whatever toppings your crew likes. Kids who “don’t like dinner” suddenly love dinner when they’re in charge of it.

Creamy Beef & Tomato Pasta
Brown ground beef with onion, stir in crushed tomatoes and a splash of cream, toss with pasta and parmesan. Tastes like you tried way harder than you did. This is the one your husband will ask about.

Chicken Enchilada Skillet
One skillet, that’s the whole pitch. Sear chicken in enchilada sauce, stir in beans and corn, blanket the whole thing with cheese. Serve with rice or warm tortillas.

Homemade Pizza
Every week needs a pizza night. Stretch the dough (store-bought is fine, I won’t tell), load up the toppings, and bake it hot until the crust is crisp and the cheese is bubbly. Let the kids do their own — pride makes everything taste better.

Slow Cooker Pot Roast
The hero of Week 2. Sear the roast if you’re feeling ambitious (or don’t — it’ll be fine), tuck it into the slow cooker with vegetables and broth, and let it go low all day. Come home to a house that smells incredible and dinner that’s already done. If you want to mix it up a bit, try this Brown Butter Mississippi Pot Roast, but fair warning you may never make pot roast any other way.

Flex Night
Yup, you read that night. A plan with no plan. Plan this for a night you know you’ll be busy, or keep it in your pocket when you need a breather. Cereal, takeout, freezer meals, they all count.

A few tools that make this week easier

You don’t need anything fancy — but these are the workhorses behind Week 2’s dinners:

  • Slow cooker — the obvious one. The pot roast cooks all day while you live your life, and it does great baked potatoes too.
  • Large cast-iron skillet — for the enchilada skillet and the honey garlic chicken. Goes stovetop to table, fewer dishes.
  • Half-sheet pan — bakes a whole pound of bacon at once for the potato bar.
  • Pizza stone or steel — the difference between good homemade pizza and great homemade pizza. Crispy crust, bubbly cheese.
  • Rice cooker — set it and forget it while the honey garlic chicken simmers. One less pot to babysit.
  • Instant-read meat thermometer — takes the guesswork out of the pot roast. No more cutting it open “just to check.”

Want me to do this for the other three weeks too? That’s exactly what the full plan is for. 👇
