October Meal Plan Week 3: 6 Kid-Approved Dinners
Four kids, five and under, four completely different opinions about what counts as food. October Meal Plan Week 3 is my peace treaty: every dinner comes with a built-in picky-kid move — the deconstructed version, the dip options, the plain portion scooped out before the sauce goes on. Nobody’s making a second dinner this week. Not even me.

Here are the six dinners — the quick version. 👇
1. Crispy Ranch Chicken Tenders
Chicken strips coated in ranch-seasoned crumbs, baked or air-fried until golden and crispy. Serve with extra ranch for dipping. Picky-kid move: let them choose their dip — ketchup, honey mustard, or ranch. Tenders are a picky eater’s best friend. (Psst…need a homemade ranch seasoning? Check out this blog post! )
How to make it: coat chicken strips in ranch-seasoned crumbs, bake or air fry until golden and crispy, and serve with extra ranch for dipping.
2. Walking Taco Bowls
Brown seasoned taco meat, crush chips right in the bag (or into a bowl), and pile on cheese, lettuce, tomatoes, and salsa. Dinner in a bag — kids think it’s genius. Picky-kid move: chips, meat, and cheese in the bag; toppings are optional.
How to make it: brown seasoned taco meat, crush chips right in the bag or into a bowl, and pile on cheese, lettuce, tomatoes, and salsa.
3. Creamy Chicken Noodle Soup
Simmer chicken in broth with onion, carrots, and celery, shred the meat, and add it back with noodles and a creamy swirl. The coziest bowl of the week. Picky-kid move: noodles and chicken in the bowl with broth on the side.
How to make it: simmer chicken in broth with onion, carrots, and celery; shred the meat and add it back with noodles and a creamy swirl until tender.
4. Cheesy Beef & Rice Skillet
Brown beef with onion in a skillet, stir in rice, tomatoes, and broth, cover and simmer until the rice is tender, then finish with melted cheese. One skillet, that’s the whole pitch. Picky-kid move: serve rice, beef, and cheese in separate spots on the plate.
How to make it: brown beef with onion, stir in rice, tomatoes, and broth; cover and simmer until tender, then finish with melted cheese.
5. Loaded Chili Dogs
Warm the hot dogs, heat the chili, toast the buns, and load them up with chili, cheese, onions, and all the fixings. The fun dinner of the week. Picky-kid move: plain hot dog in a bun (or cut in coins for dipping), chili on the side.
How to make it: warm the hot dogs, heat the chili, toast the buns, and load them up with chili, cheese, onions, and all the fixings.
6. Baked Ziti
Toss cooked ziti with marinara and ricotta, top with mozzarella, and bake until hot and bubbly. Assemble it in the morning so it’s ready to bake at dinner. Picky-kid move: scoop out a plain butter-and-parmesan portion before adding sauce.
How to make it: toss cooked ziti with marinara and ricotta in a dish, top with mozzarella, and bake until hot and bubbly.
7. Flex Night
Night 7 is yours. Leftovers, takeout, breakfast-for-dinner, that random freezer meal — whatever’s easy. You earned it.
Flex night isn’t a cop-out, it’s the system working: six planned dinners plus one pressure valve means the plan survives real life.

You don’t need anything fancy — but these are the workhorses behind Week 3’s dinners:
- Air fryer — the tenders’ best friend. Crispy without the oil splatter, and it reheats leftovers like a dream.
- Large skillet — does triple duty: taco meat, the cheesy beef & rice skillet, and the chili for chili-dog night.
- Large sheet pan — bakes a whole batch of tenders at once and toasts all the hot dog buns in one go.
- Dutch oven or large soup pot — the creamy chicken noodle soup deserves a proper pot.
- 9×13 baking dish — for the baked ziti. Assemble in the morning, bake at dinner.
Want me to do this for the other three weeks too? That’s exactly what the full plan is for. 👇
