Pistachio Syrup: Homemade Pistachio Latte
When I (Sid) was first trying to convince Kyle that we needed an espresso machine, I went into full salesperson mode. One of my biggest selling points was that we could make our favorite espresso drinks at home with real, simple ingredients—not the syrups and mystery flavors you get at most shops. And honestly, once we got our Ninja Luxe Café, it became part of our daily rhythm. It’s so easy to use, and it makes the whole house smell like a little coffee shop the second it starts brewing.
What Kyle didn’t expect, though, was how much fun we’d have learning to make drinks together. I used to be a barista way back in the day, so dialing in espresso and frothing milk feels a little nostalgic for me. And Kyle? He has fully committed to the latte-art journey. We’re not good yet—like, not even close—but every morning we try a new little swirl or heart, and sometimes it even looks intentional.
Even though we almost always order different drinks when we go out for coffee, there is one that we both absolutely love every single time: the Starbucks Pistachio Latte. It’s creamy, cozy, slightly nutty, and honestly just one of those drinks that feels like a hug in a cup.
And the honest truth?
This homemade version tastes soooooo much better.
It’s made with homemade pistachio syrup—real pistachios, real flavor, nothing artificial. It’s richer, smoother, and has that warm, buttery sweetness that the store version never quite gets right. Plus, making pistachio syrup it at home means we can tweak it exactly how we like it and sip it in our pajamas while the kids eat breakfast. Total win.
Pistachio Syrup: Homemade Pistachio Latte
Ingredients
- 6 oz Roasted Pistachios
- 1 cup Sugar
- 1 cup Brown Sugar
- 3 cup Water
- 2 shots Espresso
- 8 oz Milk
Instructions
- Add the pistachios and water into a high speed blender, and blend until the pistachios are finely chopped and mixed well with the water.
- Add the pistachio and water mixture into a medium sauce pan with the brown sugar and regular sugar. Turn on medium low heat, and stir until the sugar has dissolved.
- Let the mixture simmer for about 15 minutes, stirring occasionally.
- Turn off the stove, and add in the almond extract.
- Let the mixture cool, and if you would like no tiny pistachio pieces in your pistachio syrup, run it through cheese cloth before storing it in a quart sized jar. I don’t mind the tiny pieces!
To Make Your Pistachio Latte:
- Add 1-2 tbsp of your pistachio syrup to your mug, or more depending on how sweet you want. There’s really no set rules here.
- Pull 1-2 shots of espresso over your syrup.
- Steam your 8oz of milk, and pour it over the espresso and syrup. Enjoy!!
Notes
- If your pistachios are unsalted, then add a pinch of salt to this recipe!
- If you would like an iced latte, then instead of steaming your milk, pour your espresso shots and syrup over ice, and then pour your milk of choice.
