Easy Meatloaf Muffins

These homemade meatloaf muffins are a quick and cozy twist on classic meatloaf. Made with ground beef, oats, and dried minced onion, they bake in a muffin tin for perfectly portioned mini meatloaves that are juicy, flavorful, and ready in about 30 minutes

Ingredients

Meatloaf Muffins

  • lb ground beef (85/15 works best)
  • ¾ cup rolled oats
  • 2 tbsp dried minced onion
  • 1/2 cup milk
  • 1 egg
  • 2 tbsp ketchup
  • 1 tbsp coconut aminos
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper

Optional Glaze

  • 1/4 cup ketchup
  • 2 tbsp maple syrup
  • 1 tsp mustard

Instructions

  • Preheat oven to 375°F and lightly grease a 12-cup muffin tin.
  • In a large mixing bowl combine the rolled oats, dried minced onion, and milk. Let sit for 2–3 minutes to soften.
  • Add the ground beef, egg, ketchup, coconut aminos, garlic powder, salt, and pepper. Mix gently until just combined.
  • Divide the mixture evenly between the muffin cups, filling each almost to the top.
  • OPTIONAL: In a small bowl mix ketchup, brown sugar, and mustard. Spread about 1 teaspoon on top of each meatloaf muffin.
  • Bake for 18–22 minutes, or until the internal temperature reaches 160°F.
  • OPTIONAL: Broil the muffins for 2-3 minutes to caramelize the glaze, just keep an eye on them so that they don't burn.
  • Let the meatloaf muffins rest for 5 minutes before removing from the pan and serving.

Notes

  • Use rolled oats instead of breadcrumbs for a hearty texture and pantry-friendly ingredient.
  • Soaking the dried onion in milk helps soften it and blend into the meat mixture.
  • Avoid overmixing to keep the meatloaf muffins tender.
